Self-rising flour seems to be everywhere these days, but I haven’t had much luck with recipes that call for it. So I dug a little deeper: what is it, and can you make it yourself?
Self-rising flour is simply all-purpose flour with baking powder and salt already mixed in. It’s milled from softer wheat, which gives baked goods like biscuits, pancakes, and cakes a tender crumb without the extra measuring.
Still, if you’re not getting the rise you hoped for, don’t worry—you can go back to basics. Making your own is easy: for every 1 cup of all-purpose flour, whisk in 1 ½ teaspoons of baking powder and ¼ teaspoon of salt. Voilà—homemade self-rising flour without the extra cost.
